Betroot and Orange Salad

Method: 

1. Prepare the dressing by whisking the olive oil, vinegar, garlic, salt and pepper.

2. Layer beets and oranges on plates, dividing evenly then arrange the salad leaves and onion over beets.

3. Drizzle the salad with the dressing and garnish with the feta, walnuts and mint leaves. 

Serve immediately. Enjoy!
